I've acquired a spell that involves something called "recall". As nearly as
I can tell by reading this newsgroup recall moves me to someplace (or
places?) I've previously "marked".

1. How do you mark a place?
2. Can you mark more than one place at a time?
3. If so, how do you choose which marked place you will move to?

Any help would be appreciated, thanks in advance.

spell from a mage at the Balmora Temple, if you join the temple first.
Other mages scattered around will also teach you.

You set the mark spell as your active spell and cast it to mark a spot.
If your casting skill isn't high enough it might not work. Scrolls and
charms always work. Then you can use the recall spell to return to the
place you marked.

Annoyingly after going to all the effort of marking one spot I always wanted
to return to with my no magic ability character I then managed to mark a
place in the middle of no where by eating something. I don't think there are
any mark ingredients in the original game. I think it was a scamp claw from
a plug in. The potions of mark are in the game though.

You need the Spell "Mark".
Get it in the Balmora Temple.
You can only mark one Place with the Original "Mark"-Spell, but if you install
the downloaded Plugin "MultibleMarks" (or so), you can mark 12 Places.

Use the spell "Mark" where youwant to return to. You may also use an item
enchanted with "Mark". You can only "mark" 1 place at a time. It will show
as a white "x" on your local map.
